LATIN CUISINE
MILLO IS A CONCEPT BASED ON THE TRADITIONS AND FLAVOURS OF LATIN AMERICAN CUISINE CREATED IN A CONTEMPORARY AND CREATIVE FORMAT. OUR MENU IS THE RESULT OF EXPERIENCES AND INVESTIGATIONS THAT ARE CARRIED OUT YEAR AFTER YEAR BY CHEF MICHEL GUZMAN IN THE GASTRONOMIC CULTURES OF LATIN AMERICA.





OUR CHEF
MICHEL GUZMAN DURANGO WAS BORN IN CARTAGENA DE INDIAS (COLOMBIA) IN 1990. INHERITED THE TASTE OF COOKING THROUGH HIS FAMILY. HE STARTS HIS CAREER ENTERING THE SENA (NATIONAL LEARNING SERVICE) OF CARTAGENA. SPECIALIZED IN CULINARY TRENDS AND HIGH PERUVIAN CUISINE IN LIMA (USIL), PERU. HE WORKED AS CHEF OF THE RESTAURANT 'LEO' IN BOGOTA, COLOMBIA. DURING THIS TIME HE ENRICHED HIS KNOWLEDGE BY DOING SEVERAL PRACTICES IN SPAIN (MARTIN BERASATEGUI ***, ARZAK ***, NINEU, ANDREU GENESTRA*) AND IN FRANCE (RICHARD MARCO *). OVER THE YEARS, HAS BEEN DEDICATED TO CONDUCT INVESTIGATIONS IN THE GASTRONOMIES OF LATIN AMERICAN COUNTRIES (COLOMBIA, PERU, MEXICO, CUBA, GUATEMALA).
